.In addition to the traditional goats’ cheese from local farms in the region, you can try the creamy Brillat Savarin, Soumaintrain and the ‘trou du cru’ cheese, perfected by the use of Marc de Bourgogne liqueur as it matures, not to mention the delicious mountain goats’ cheese quaintly named ‘ thym de tamarre’
